Mixed vegetable rice- Kerala style

Mixed vegetable rice is a simple and super easy main course , It is a combination of Biryani rice and fried rice. A perfect no fail recipe that can be made by anyone. Beginners can blindly follow the simple steps and make it easily.

The recipe is very simple as it hardly takes 15-20 mins., Mixed vegetable rice can be served with simple compliments like curd raita or with Tomato sauce . To make it even more better or grand you may serve it along with indo chinese dishes like the manchurians or with a typical spicy meat gravy.

The long grain rice and the vegetables are cooked together and finally garnished with fried onions,coriander leaves, It that simple with some great taste. The only thing to keep in mind is to stop cooking the rice at the right stage.

Ingredients

  1. Whole spices – 2 cloves, small piece of Cinnamon, 2 cardamom.
  2. Mixed vegetables – 1 carrot (cut into medium pieces), Peas, Corn (You may use your kind of fav ones)
  3. 2 cups of long grain basmati rice (Good brand)- soaked and drained
  4. Salt
  5. 1 tbsp lemon juice
  6. 1 tbsp – Butter (or – Ghee or oil )
  7. More than sufficient water ( for the rice to cook)

Other Main ingredients

  1. 1 Onion – thinly sliced
  2. Cashews & raisins – accordingly for garnish
  3. Coriander leaves for garnish
  4. Curry leaves – Few
  5. Oil or ghee or Butter for frying – 3 tbsp

Method

Step 1 : To a heavy bottomed vessel add more than sufficient water , salt and allow it to boil extremely well.

Step 2 : To the well boiled water add lemon juice, Butter (or ghee or oil ), whole spices, veggies, drained rice . Cook until the rice is 80% done. Off the flame and drain the rice and veggies. The remaining 20 % will cook while the rice is getting rested.

Step 3: To a kadai add Oil (or ghee or Butter) add curry leaves sorte for 30 secs., then add the thinly sliced onions sorte until golden brown and crips (like you make the fried onions for biryani) , Add raisins and cashews. Sorte well.

Step 4: Transfer the drained rice and veggies to a wide kadai and top it with the roasted onions, raisins and cashews . Gently combine the rice and the fried onions garnish with coriander leaves . Serve it HOT!
