Chicken stir fry (Chicken Potiterichadu )

Chicken stir fry (Chicken Potiterichadu) is a fast food recipe . A kind of indo chinese stir fry that’s made with mixing up fried chicken pieces along with veggies and sorted in tomato and soya sauce gravy.

Chicken stir fry can be served as a starter or it can served with meals , or any indian bread as a side.

Ingredients

Pre marination :

  • Chicken pieces – cut into medium to small pieces (with bone pieces preferred)-600 grams
  • 1 tbsp – Kashmiri chili powder
  • 1 tsp ginger garlic paste
  • 1 tsp Meat masala
  • 1 tbsp – Lemon juice
  • Salt
  • Corn flour- 2 tbsp

Other main ingredients

  • Oil for Deep frying

For Stir fry :

  • Butter -3 tbsp
  • Carrot – thinly sliced
  • Capsicum – thinly sliced
  • Cabbage – thinly sliced
  • Kashmiri chili powder – 2 tsp
  • Chicken masala- 1 tsp
  • Green chiles – crushed – 3 nos.,
  • Crushed red chili flakes – 2 tsp
  • Spring onion- chopped
  • Pepper powder- 1 tsp
  • Sugar – 1 tsp
  • Tomato Ketchup – 1 tbsp
  • Soya sauce – 2 tsp
  • Salt
  • Coriander leaves

Premarination :

Step 1 : To a bowl add the cleaned and drained chicken pieces add the ingredients mentioned under “To marinate” . Allow the marination to sit for 30 mins.,

Step 2: To a Kadai add sufficient oil for deep frying and fry the chicken pieces until well cooked. Do not over cook.

Stir fry Process:

Step 1:To a Kadai – add Butter crushed green chilies, crushed dry red chili flakes & Kashmiri chili powder (ensure to cook the mentioned on absolute low flame)

Step 2: Add sliced onions, crushed ginger garlic, carrot & capsicum, and sorte for 3-4 mins., on medium high flame.

Step 3: Add chicken masala cook until the raw smell is cleared, add in tomato sauce, soya sauce sorte for 3 mins., on medium high flame.

Step 4 : Add fried chicken pieces, cabbage , spring onion leaves , coriander leaves, pepper powder, sugar , salt combine everything together well.Check for seasoning

Step 5: Sorte well and cook. Serve it Hot!
