Szechuan Chicken fry like the name says its a spicy recipe with mix of Indian and chinese ingredients.
Szechuan Chicken fry is a spicy and a super tasty chicken fry that can be made by three main steps
- Pre marination
- Shallow fry
- Cooking with the Szechuan sauce
Szechuan Chicken fry is an excellent combo with Fried rice, noodles or even as a starter.

In this recipe Szechuan Chicken fry only the leg piece is used however you may use any part of the chicken .
Ingredients
For Marination
- 4 chicken leg piece (or any part of chicken)
- 1 Egg
- 1 tbsp Kashmiri red chili powder
- Salt
- 1 tsp Ginger garlic paste
- 1 tbsp lemon juice
- 1.5 tbsp Corn flour
Other Main Ingredients
- Cooking oil ( 1/2 cup for shallow frying +2 tbsp – sauce making)
- 2 cloves of garlic finely chopped
- 1 Large onion Finely chopped
- 2 tbsp Szechuan sauce (I used Chings)
- 1 tsp Soy sauce
- 1 tsp Pepper powder
- Spring Onions -chopped
Method
Step 1: Draw gashes over the chicken legs , Marinate for a minimum of 1 hour in the refrigrator with the ingredients mentioned under “To marinate”
Step 2: After marination shallow fry the chicken pieces completely and keep it aside. Cook until the chicken has a roasted texture and till the chicken is well cooked.
Step 3: To a wide kadai add oil, chopped garlic sorte for a min., add in the chopped onion cook for one min., Next add Szechuan sauce , black pepper powder, Soy sauce,salt and cook until the oil separates. Roughly around 2-3 min, on medium low flame.
Step 4: Add the roasted chicken pieces and coat it extremly well with the prepared sauce cook for 5-6 mins., on low flame.
Step 5: Garnish with spring onions , Serve it Hot with Noodles or fried rice.
