Christmas Special Beef roast

Beef roast is simply one delicious recipe which I had recently made and being christmastime this serves to be the show stopper for the menu and I am sure you guys will enjoy the same. The recipe is made by pre cooking the beef with few ingredients and then the beef is slow cooked extremely well and then served .

Best served with steamed rice, Indian breads, Hoppers etc.

Serves 4:

Ingredients

To Pressure cook:

  • Beef cubes (cut into medium pieces- including bones )
  • Turmeric powder -1/4 tsp
  • Curry leaves
  • Garlic (2 cloves )and Ginger – small piece (chopped)
  • Salt
  • 1/4 cup of water
  • 1 tsp of pepper powder

Other Ingredients

  • Cashews – 10 pieces
  • Raisins -10
  • Coconut flakes – 20
  • Curry leaves
  • Ginger small piece – chopped
  • Garlic -5 cloves chopped
  • 3 Green chilies – slit
  • Dry red chili -3
  • Small onions (shallots) – 10 sliced
  • 2 Large Onions – sliced
  • 1 Tbsp – Kashmiri chili powder
  • 1 Tbsp Coriander powder
  • 1 tbsp Pepper powder
  • 1 tsp Garam masala
  • Curry leaves
  • Salt
  • Coconut oil as needed 2 tbsp +1 tbsp +1 tbsp

Method

Step 1: To a pressure add in the cleaned beef cubes and pressure cook it with the ingredients mentioned under ” To pressure cook” .Cook the beef until 90% do not over cook as we will be slow cooking the beef .

Step 2: To a wide kadai add 2 tbsp coconut oil then add in the coconut flakes sorte until slight golden then add in the cashews when they turn slight golden add in the raisins and once they begin to blot remove all from the kadai and keep it aside. Do not burn any of these Maintain low flame when you do all these.

Step 3: To the same kadai add in the chopped garlic , ginger , dry red chili , green chili , curry leaves and shallots roast until crisp.(roughly around 2-3 on medium low flame) Then add in the onions and sorte until they turn brown and soft.

Step 4: Add Coriander powder and red chili powder cook for mins., until the raw smell leaves . Then add in the cooked beef pieces along with the stock water and start roasting it until the water gets evaporated. Add in some curry leaves , coconut oil (1 tbsp) and salt while roasting.

Step 5: Once the beef starts getting to roast add the pepper powder, garam masala and cook until they turn dark brown. (maintain low flame through the roast) Finally add the roasted cashew, raisins, coconut flakes and some good amount of curry leaves and a dash of coconut oil(1 tbsp) and you are good to go !Serve it HOT.
