Rava Kesari – Madurai Kalyanam Kesari

Kesari is such a delightful sweet which is very famous in Tamil nadu . Its such a simple and easy recipe that can be done just in a gify with very less ingredients. Whether its a veg meal or Mutton Biriyani a Kesari has to be there to complete the meal, that too when placed on a banana leaf it just uplifts the whole meal. As the Deepawali/ diwlai sesaon is up you can add this to your menu a real time saver and a super simple recipe.

Serves -3

Ingredients

  • 1 Cup Semolina
  • 1 Cup Sugar (Adjust accordingly)
  • 3 Cups of water
  • Pinch of orange food coloring
  • Pinch of Salt
  • 2 Cardamom pods
  • 1/4 cup of Ghee
  • 1 tbsp of Oil.(No Coconut oil)
  • Cashews and Raisins
  • Pineapple essence -1 tsp
  • Tutty fruity and red cherry (optional)

Method:

Step 1: To a wide Kadai (preferably Non stick) add 1 tbsp of ghee and get the Cashew and raisins roasted . First roast the cashew and then the raisins . Remove them once done.

Step 2: To the same pan add the measured semolina and roast them it for 3-4 mins., on medium low flame or until it turns aromatic.

Step 3: Remove the Semolina and then add 3 cups of water , pinch of salt, food coloring, pineapple essence, 2tbsp of Ghee,cardamom pods, 1 tbsp of Oil and allow it boil extremly well.

Step 4: Add the roasted Rava and start mixing it continuously so that you don’t get lumps to it. Once the Rava is semi cooked add the sugar and cook until done . You can see the the whole mix getting smooth and silky finally add the cashews and rasins ,tutty fruity, red cherries and finally add the remaining ghee and off the flame. Serve it Warm! Enjoy.
