Soft and fluffy Upma.

When you run out of time and when you want an instant breakfast Upma is the best option.A simple , quick , easy recipe and when made correcly it turns out to be supper soft and fluffy.

Upma is served with Banana, papadam, Hard boiled egg and sugar . All these along with a glass of milk completes a healthy and a perfect breakfast.

Ingredients

Serves 3:

  • Rava -1.5 cups
  • Water-2.5 cups
  • Milk-0.5 cup
  • Onion – medium side (medium chopped)
  • Salt
  • Small piece of ginger – finely chopped
  • Green chili- 2 – finely chopped
  • Curry leaves
  • Mustard seeds-1/2 tsp
  • Urud dhal -1/2 tsp
  • Oil / Ghee -1 tbsp

Method:

Step 1: Add some Ghee to the kadai and add the rava roast them on absolutle low flame for around 7-8 mins or until you get the roasted aroma of the rava.

Step 2: To a pre heated kadai add oil / ghee and add mustard seeds, urud dhal and sorte until they splutter.Then add the chopped onions, ginger, green chilies, curry leaves and sorte until they onion turns soft.

Step 3: To another sauce pan add the measured water and milk get it to a good boil, along with salt

Step 4: Once the onions turns soft add the boiled water and milk to the kadai , check for salt. Add the roasted rava and start to stir continuously so that you dont get lumps to it. Once the water is completely absorbed by the rava , get to cooked on 3-4 mins., on low flame. Off the flame and close and keep the kadai for around 4-5 mins for the rava to become soft.

Step 5:After 5 mins open the lid and add a tsp of ghee and with the help of a fork start scrambling the upma so that you start getting small balls this step helps in getting the upma absolutely fluffy. Serve Hot.

Points to remember:

  • Add very less salt as the rava absorbs a good amount of salt so adding less salt is perfect.
  • Adding milk and ghee helps to get a soft texture to the upma.
  • Avoid green chilies when you serve it for kids.
  • Refrain from roasting the rava in a non stick pan as you will get starches on the pan.
  • Measure the Rava, milk and water in the same measuring cup.
  • Even though if you buy roasted rava re-roasting the rava is really important as that contributes to the taste and texture.
